Here are some ideas I have been musing on for my project boat. Keep it simple.
Single spar, although I would consider two. Hollow, perhaps carbon reinforced.
Less than 20 feet, around 17 would be nice.
Composite hull material with carbon for stiffness and lightweight, core material something recycled, perhaps strip built of re-manufactured wood from old siding, possibly pallets.
Sail plans; gaff or lug, maybe junk. Tanbark cotton, or composite new.
Galley & head plans. Pipe bunks?
Collapsible cabin, open cockpit. Bimini or shade tent, screening.
